Casino’s Culinary Team Provides Unique Dining Experience

Kinder, LA––Coushatta Casino Resort offered an in-kind donation of $11,000 in support of Family & Youth’s Dinner at Mi CASA, hosted by Sam and Denise Hebert. Dinner at Mi CASA is a fundraiser event held in the home of a member of the community. CASA is the acronym for Court Appointed Special Advocates. It is also, appropriately, the Spanish word for ‘home’ and represents the safe, loving, permanent home that abused and neglected children long for and deserve. CASA volunteers provide a powerful voice in court for children who have been removed from their homes. The casino’s award-winning culinary team prepared a unique dining experience for Dinner at Mi CASA attendees.

During cocktail hour, guests wandered through the property tasting grilled oysters, lobster, shrimp, prime beef and blackened foie gras sliders, an array of domestic and imported cheeses with assorted breads, fresh tropical fruits, fresh tossed pastas with a local selection of specialties and sauces, and butler-passed hors d’oeuvres. Crawfish bisque began the dinner––crispy French bread wrapped around flash-fried Louisiana crawfish and surrounded by velvety smooth bisque, then shrimp and crab martini on a bed of micro greens with remoulade sauce, followed by grilled bone-in filet of beef, rosemary roasted red potatoes, and sautéed baby vegetables. Creamy Creole cheesecake topped with Louisiana strawberries and a crispy toasted pecan cookie ended the meal on a sweet note.
